Overview

Charlotte is a 19-year-old Caucasian female who is majoring in dietetics at a local university. She is also a member of the university’s cross-country track team, which requires several hours of practice per day in addition to track meets. As an honors student, Charlotte devotes a significant amount of time to her studies, striving to maintain a GPA of at least 3.5 in order to ensure acceptance into a competitive internship upon graduation.

Background
Charlotte has an appointment with her health care provider due to chronic fatigue and headaches. When asked about her diet, Charlotte reveals that she adopted a vegan diet a few months ago in order to be as healthy as possible for the upcoming track seaso states that she is too busy to cook or eat meals, but she eats “on the run” throughout the day. The most common foods in her diet include green salads with fat-free dressing, raw vegetables, “protein bars”, fruits, and diet soft drinks. She avoids meat, poultry, fish, eggs, cheese, and dairy products. She says that she is proud of her ability to “limit her intake to healthful foods only”.
