This wiki was created as resource for College of Nursing faculty and contains a library of nutritional cases studies for use as a learning activity within blackboard. Each learning activity presents a case study in the form of a short video depicting a nutritional issue. Students explore the case study resources and use them in conjunction with prior knowledge to find a solution. A question worksheet along with an answer key is provided with each cases study. Students answer the specific questions within the worksheet and participate in an online discussion regarding the patient’s diagnoses and treatment plan.

Charlotte has an appointment with her health care provider due to chronic fatigue and headaches. When asked about her diet, Charlotte reveals that she adopted a vegan diet a few months ago in order to be as healthy as possible for the upcoming track seaso states that she is too busy to cook or eat meals, but she eats “on the run” throughout the day. The most common foods in her diet include green salads with fat-free dressing, raw vegetables, “protein bars”, fruits, and diet soft drinks. She avoids meat, poultry, fish, eggs, cheese, and dairy products. She says that she is proud of her ability to “limit her intake to healthful foods only”.
